Apple Coffee Cake

Ingredients: 

  • 2 apples, thinly sliced
  • 2 Tbsp b. sugar
  • 1 cup tapioca starch, 1 cup white rice flour <–blend, and use 1 1/3 cup
  • 3/4 c sugar
  • 4.5 tsp b. pwd
  • 2 tsp guar gum
  • 1/4 tsp salt
  • 1/4 c margarine, melted
  • 2 eggs, beaten
  • 3/4 cup milk
  • 2 tsp vanilla
  • 1 tsp cinnamon
  • 1/3 cup b. sugar

Instructions:

  1. Butter 8″ sqare baking pan, preheat oven to 325F
  2. blend apples with sugar and set into pan.
  3. combine flour blend, sugar, b. pwd, salt, guar gum and set aside.
  4. Beat together eggs, add margarine, milk, and vanilla.
  5. add dry ingredients, mix until combined, spread over apples.
  6. Mix last cinnamon & b. sugar together. Sprinkle over batter.
  7. Bake 50 – 60 minutes at 325 – 350F, until sides are pulling from edges, and golden brown.
