Fluffy Chocolate cake

This is not the usual fudgy/ brownie type cake that I usually find in gluten free circles.  I took my easiest chocolate cake recipe – one bowl – and de-glutified it.  I’ve searched high and low and can’t find those darn pictures.  Memory cards are a good idea – but do they have to be so small?  Enough whining, here’s the goods:

Mix-Easy Chocolate Cake

  • 1/3 c vegetable oil
  • 2 squares (2oz) unsweetened chocolate
  • 1/2 c. water
  • 1 c. sugar
  • 2 large eggs
  • 1 1/4 cup flour blend
  • 1/2 tsp salt
  • 1 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 Tbsp vanilla
  • 1 tsp guar gum
  • chocolate chips, optional
  1. Heat oil and chocolate squares in microwave until soft.  Whisk until blended.  (be careful!)
  2. Add all other ingredients!  Mix 2-3 minutes, until smooth.
  3. Spread in greased 9″ round baking pan.  Top with chocolate chips if desired.
  4. bake 350° for 30-40 minutes.  When pressed in the middle, it will spring back up.
