This is not the usual fudgy/ brownie type cake that I usually find in gluten free circles. I took my easiest chocolate cake recipe – one bowl – and de-glutified it. I’ve searched high and low and can’t find those darn pictures. Memory cards are a good idea – but do they have to be so small? Enough whining, here’s the goods:
Mix-Easy Chocolate Cake
- 1/3 c vegetable oil
- 2 squares (2oz) unsweetened chocolate
- 1/2 c. water
- 1 c. sugar
- 2 large eggs
- 1 1/4 cup flour blend
- 1/2 tsp salt
- 1 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 Tbsp vanilla
- 1 tsp guar gum
- chocolate chips, optional
- Heat oil and chocolate squares in microwave until soft. Whisk until blended. (be careful!)
- Add all other ingredients! Mix 2-3 minutes, until smooth.
- Spread in greased 9″ round baking pan. Top with chocolate chips if desired.
- bake 350° for 30-40 minutes. When pressed in the middle, it will spring back up.
