I just love that these jello moulds are called salad – it is a perfect accompaniment to the burgers and hot dogs that will be barbecued soon. Of course we all know that it IS dessert.
Ingredients:
- 2 pkg raspberry jello (the small 4oz ones)
- 2 cups hot water
- 1 cup cold water
- 1 can strawberry / raspberry pie filling
Topping:
- 8oz cream cheese
- 1 tub cool whip (The Kraft brand of this “edible oil byproduct” IS gluten free in Canada) It probably is horrible for your body – but tastes like heaven!
- 1 can crushed pineapple, well drained
Directions:
- Dissolve the jello in the hot water. Completely.
- Mix all the jello ingredients, and pour into 9X13 pan. Chill until firm (several hours)
- Blend topping ingredients, spread over jello.
- This can be served right away, or kept refrigerated until needed.
