I adore this potato salad – nothing compares!
Ingredients:
- 6-7 large, cubed potatoes, cooked just until soft (don’t overcook)
- 2-3 eggs, hard boiled, shelled & chopped
- 1 cup bread & butter pickles , chopped
- 1/2 small onion, chopped
Dressing:
Mix this separately as I’m not sure how much you’ll need on your salad (i don’t use much – others like it bathed in the stuff).
- 1/2 cup mayonnaise (not Miracle Whip)
- 1 Tbsp yellow mustard
- 2 Tbsp pickle juice – Mom’s secret ingredient!
Instructions:
Mix salad ingredients together in large bowl.
Mix dressing separately. Add dressing to taste. Mix well to coat.
This makes a mess of your salad bowl, so take a turn around the edges with a paper towel, and sprinkle paprika on top (just ’cause it’s purdy), and you’re ready for the company picnic!
