Summer Food & Children do NOT mix!

The recipe I’m posting today has fresh berries on it, and candied almonds.  So at least the children are eating something.  It sure as hell isn’t the spinach!  And don’t even get me started on their faces when they saw the potato salad.  You’d think it was growing mold or something.

I’m getting so frustrated with summer recipes because the kids seem to hate them!  All this fresh stuff, and it’s heavy on the vegetables light on the starches.  Not exactly their favorite.  I wonder what do you people do with summer food & kids?  And please something other than hotdogs and cheesies!

    how about trying a layerered thingy (i think they are really called terrines) w/ grilled veggies and cheese layered, then baked to make a “cake”. Or maybe veggie enchiladas (if they are ‘flavorful’ enough, maybe the kids won’t notice they are veggies), otherwise, if you have a vitamix (i don’t but want one really really bad) just throw some veggies and fruits in and make them yummy juice, or freeze into popsicles. If the kids don’t like potato salad how about noodle salad w/ fresh diced veggies and italian dressing on top?

    Hi Lindsey, I’m not sure if I emailed you back on this or not. but I love the juice idea. I probably won’t MAKE it – but store bought stuff will still help tremendously with the diet.
    I’m going to look up terrines, I dont know what those are. but anything with grilled veggies & cheese sounds good to me! :)
