TOTALLY ran out of veggies a couple days ago. You just gotta have something fresh with Shepherd’s Pie, no? Here’s something similar to my Mom’s cucumber salad when I was growing up:
- cucumber (okay, so I did have a cucumber), sliced
- drizzle EVOO and white rice vinegar
- dash of Italiano seasoning
