Gluten Free Sausage, Broccoli & Egg Surprise Skillet

Welcome to the world of “Mamma’s Surprise Skillet”.  The ingredients are usually a surprise to Mamma (until about 5PM).

Any successful Mamma’s Surprise Skillet will need the following:

  • Potatoes, frozen hashbrowns or frozen french fries
  • Sausage/Egg/Bacon or a combination
  • 1 Tbsp ClubHouse All in One Italiano Seasoning
  • 1/2 onion, chopped
  • olive oil
  • Ketchup, for garnish serving

This particular dinner was a combination of potatoes, gluten free sausage, eggs, broccoli and onion.

Directions:

  1. Heat oil in skillet over medium – high heat.  Saute onions until lightly brown.
  2. Add sausage / bacon if using and let all the fat drain into the pan.
  3. Add potatoes, diced.  Add seasoning and extra oil if needed. Cook until potatoes are done (10 min)
  4. Add other veggies, cook until done (5 minutes or so).
  5. Lastly, scramble 2 eggs in a bowl, add to the skillet and stir through until cooked.
  6. Serve with a side of ketchup.

And thus allow me all the time I need to play with the icing and make it adorable.   Frosting/ icing is almost always gluten free whether store bought or made at home.

Yesterday Emma turned 8 years old.

She has always been my sunshine.

And possesses stubborn streak that few get the privilege of meeting.

Gluten Free Oatmeal Raisin Cookies – the search is over.

I have about 5 Oatmeal Raisin Cookie recipes in my recipe binder that I’ve tried to edit into gluten free goodness.  Frankly I just didn’t think that any gluten free recipe would be as good as MINE.  But alas, I have’t quite perfected that elusive chewy and crisp on the outside Oatmeal Raisin Cookie.  And after several flopped batches, I loose my motivation to keep wasting expensive gluten free oats!  Today Mike isn’t feeling well, and Oatmeal Raisin Cookies are his favorite, so I gave in, and searched for a GF recipe.  I’ve actually tried a couple GF oatmeal raising cookie recipes from my cookbooks but I haven’t had any that are truly blog-worthy.

Here’s the recipe from Girl Cooks World, modified to use margarine instead of butter & shortening.

Gluten Free Oatmeal Raisin Cookies – the search is over.

Ingredients

  • * 1 cup margarine
  • * 1 cup brown sugar
  • * 1 cup sugar
  • * 2 large eggs
  • * 1 teaspoon vanilla extract
  • * 2 cup flour blend
  • * 1 1/2 teaspoons baking powder
  • * 1 teaspoon baking soda
  • * 3/4 teaspoon xanthan gum
  • * 1/2 teaspoon salt
  • * 2 1/4 cups gluten-free oats
  • * 1 1/4 cup raisins

Instructions

  1. Preheat oven to 350 degrees. Lightly grease a cookie sheet or line with a Silpat baking mat.
  2. Beat butter, shortening and sugars until well combined. Add the eggs and vanilla extract and mix until smooth. Add the flour blend, baking powder, baking soda, xanthan gum and salt and mix until thoroughly combined. Add the oats and raisins and stir until well incorporated.
  3. Drop heaping teaspoons into the prepared baking sheet. Bake for 10-12 minutes, or until the edges turn a light golden brown. Remove to a wire rack to cool completely.

Pancake Tuesday

My husband came in this afternoon, announcing that he has a present for me!  Yay.  I adore presents.  I hint at them.  I leave suggestions for random gifts of love around the house.  I flat out ask for them.  A girl has to feel special.  I really dont care if its a tissue paper flower, or a single chocolate.  Its truly the thought that counts.  So my husband gets into the backseat of the car to pull out my present.

Yippee.  Presents! 

He comes in with 2 grocery bags full of stuff.  Cool.

Present?

Apparently its Pancake Tuesday.  This is the first time I’ve ever heard of such a thing.  But since I wasn’t planning on cooking supper tonight anyway, I’ll take it.

Pancake Tuesday, you ask?  Me too.  Apparently today is the day before Lent.  Lent is the event in Catholic/Anglican/liturgical religions that is the 40 days before the death of Jesus.  (Easter) And, apparently, preceding Lent, is Pancake Tuesday.

Yippee.  Pancakes.

Present?

“That is your present. I bought pancakes.”

Between you and me, I love the man.  I adore him.  I adore how he puts up with me.  I adore his neurosis and unshakable calm.   But pancakes?  

I suppose since it will take all of 30 seconds to make dinner, and we get strawberries & whipped cream on them, that counts.

PS – FYI my pancake recipe absolutely rocks but in the interest of full disclosure, we’re using Bob’s Red Mill Pancake Mix tonight.  I told you – 30 seconds.

 

Pink CHEERIOS (or GF Round Cereal!)

This morning I was scouring my cupboards for something to go with PINK SUGAR to send to school with the girls.  I mean, its Valentine’s Day – who doesn’t send their kids to school with pink sugar?  The fastest/easiest is actually candied almonds, but we can’t send nuts to school for obvious reasons.  Then it hit me – Cheerios!!  How brilliant am I  is this?

You’ll need about 2 Tbsp pink sugar (or just put dye & sugar in a bag and squish)

and a cup or so of cheerios – honestly, I didn’t measure!

Heat on High until sugar starts to melt.

It will burn quickly.

So stir like the wind, darling.

Remove from heat.

Put in bags. 

Cool.

Put in bags.

Imagine these are NOT looking yellow, k?

Final result, minus the melted baggies.
