This was the result of emptying out my fridge onto my plate, adding some Balsamic Vinaigrette. In a word – YUM.

Pecan Blueberry Salad

Yield: 1 salad

Refreshing, simple, spring salad.

Ingredients

  • baby romain leaves
  • feta cheese, crumbled
  • handful broken pecan pieces
  • handful frozen blueberries
  • 1/4 orange, peeled, cut into bite sized pieces
  • 1 Tbsp Balsamic Vinaigrette

Instructions

  1. Toss together!

Frozen Peanut Butter Banana Chocolate Bites

I couldn’t think of a better name.  PB-Ba-Cho Bites?

Anyhow, I thought I read this somewhere in a new cookbook I have to review, but I can’t find it ANYWHERE, in that cookbook or anywhere else, but I’m pretty sure in my skimming, and reading last chapters, and flipping pages of magazines, I saw this somewhere.

And I tried it.  Frozen banana is amazingly smooth and creamy and YUMMY.

And those may or may not be my teeth marks.

 

Frozen Peanut Butter Banana Chocolate Bites

Yield: 18 pieces

Frozen Peanut Butter Banana Chocolate Bites

Ingredients

  • 3 bananas, cut into 6 chunks each
  • 1 1/2 cups semi-sweet chocolate chips
  • 2 Tbsp margarine
  • 1/3 cup smooth peanut butter

Instructions

  1. Heat chocolate chips & margarine in microwave. Stirring every 15 seconds until smooth.
  2. Cover a baking sheet with a sheet of tin foil.
  3. Layer on tin foil: 1/2 tsp chocolate, banana chunk, 1/2 tsp of peanut butter (I totally didn't measure).
  4. Drizzle chocolate on banana and smear it around the sides.
  5. Freeze for 30 minutes or so.

Fun with the kids. Easy & delicious!

Gluten Free Sausage, Broccoli & Egg Surprise Skillet

Welcome to the world of “Mamma’s Surprise Skillet”.  The ingredients are usually a surprise to Mamma (until about 5PM).

Any successful Mamma’s Surprise Skillet will need the following:

  • Potatoes, frozen hashbrowns or frozen french fries
  • Sausage/Egg/Bacon or a combination
  • 1 Tbsp ClubHouse All in One Italiano Seasoning
  • 1/2 onion, chopped
  • olive oil
  • Ketchup, for garnish serving

This particular dinner was a combination of potatoes, gluten free sausage, eggs, broccoli and onion.

Directions:

  1. Heat oil in skillet over medium – high heat.  Saute onions until lightly brown.
  2. Add sausage / bacon if using and let all the fat drain into the pan.
  3. Add potatoes, diced.  Add seasoning and extra oil if needed. Cook until potatoes are done (10 min)
  4. Add other veggies, cook until done (5 minutes or so).
  5. Lastly, scramble 2 eggs in a bowl, add to the skillet and stir through until cooked.
  6. Serve with a side of ketchup.

 

Gluten Free Easter Egg Nests – about 70 of them

Guess what today is? Er, if you’re reading this on Easter Friday, guess what yesterday was?

The last freaking day of school before Easter.  Guess who realized today that it was the last day before Easter break tomorrow?  You’ve obviously had your coffee if you can follow that.

Oooh. Coffee.

Where was I?

Pinterest to the rescue!  I was going to – just this second – paste some of those beautiful photos here for you to see, but then I decided I’m not that self deprecating.  We wouldn’t want you to be tempted to think I’m not as creative and fabulous as I do.

So at an unnamed place on the internet that starts with P, I found this recipe for these gorgeous little marshmellow Easter egg nests with cadbury chocolate eggs inside.

Here is how the original Easter Egg Nests recipe went:

- you whip up some home-made marshmallows (by this time I’m totally sucked into my most sarcastic and cynical pleasant self)

- then you pipe them with tip #%*(&* into nice swirls on parchment paper 

- simply roast up some coconut till nice and toasty, sprinkle approximately 21 strings around your swirl

- lightly indent the center of your swirl with chocolate eggs

Cathy Version

  • Buy pink cupcake paper cups
  • Buy large marshmallows (when those run out use a bazillion little ones)
  • Bake them at whatever oven for approximately a few minutes until big and puffy
  • Shake a bag of coconut with green food dye in it so that it looks fun and the children want to do it for you. Until blended.
  • Sprinkle green ‘grass’ around edges of each puffy marshmallow
  • Smush down in center with three Cadbury chocolate eggs.

Version 1 - large marshmellow centers

Version 2- mini marshmellows with randomly placed eggs - also very cute!

Cheesy Broccoli Bacon Bake

Comfort food to the extreme! The recipe is all my favorites: cheddar, potatoes, bacon, broccoli.  Tossed together in a creamy sauce and topped with more cheese.  Yum!

Yield: 6 servings

Cheesy Broccoli Bacon Bake

Ingredients

  • 1/2 lb bacon
  • 1/2 onion, chopped
  • 1/2 head broccoli florets
  • 4 med potatoes, cubed
  • 1/2 cup chicken broth
  • Blend 2 Tbsp corn starch, 4 Tbsp water. Shake.
  • 4oz cream cheese
  • 1 cup shredded cheddar cheese
  • salt & pepper

Instructions

  1. Fry bacon in large skillet until crispy. Remove bacon from pan. Crumble.
  2. Add chopped onion and fry in bacon grease until light brown.
  3. Add bacon back to pan, with the cream cheese, Stir to combine.
  4. Add chicken broth & potatoes, salt & pepper. Stir to combine.
  5. Cover and simmer 5 minutes. Add broccoli.
  6. Cover and simmer again until potatoes are soft (approx 5 more min).
  7. Remove from heat, add cheddar cheese. Stir to combine.
  8. Put it all in a casserole dish and heat through in 350 oven for 30 minutes.
