<li class="ingredient">1 egg, separated</li>
<li class="ingredient">1 1/4 cup gluten free flour blend</li>
<li class="ingredient">1 tsp guar gum</li>
<li class="ingredient">1/4 tsp salt</li>
<li class="ingredient">1 cup finely chopped nuts (we used walnuts)</li>
<li class="ingredient">6 Tbsp jam, any flavor (we used sugar-free apricot)</li>

<li class="instruction">Heat oven to 350degrees F, spray a cookie sheet with cooking spray.</li>
<li class="instruction">Beat brown sugar, shortening, margarine, vanilla, egg and egg yolk with blender until mixed well.</li>
<li class="instruction">Combine flour, guar gum, salt. Stir into wet ingredients.</li>
<li class="instruction">Beat egg white until slightly frothy.</li>
<li class="instruction">Shape dough into 1 inch balls, dip into egg white, roll in crushed nuts. Place 1 inch apart on cookie sheet.</li>
<li class="instruction">Press thumb into center of each cookie. Cook 8 minutes. Quickly remake indentations if necessary. And remove to rack to cool.</li>
<li class="instruction">Fill each thumbprint with about 1/2 tsp of jam.</li>

			<content:encoded><![CDATA[<div class="hrecipe"><span class="published"><span class="value-title" title="2011-11-14"></span></span>These turned out PERFECT.  The trick, as far as I&#8217;m concerned is to have little learners watching over your shoulder.  When explaining how to measure 1/2 a cup, you can&#8217;t just grab the closest coffee mug and measure out <em>about half a cup</em>.  We got out the measuring cups (the real ones provide a great math lesson. How many 1/2 cups make a whole?) and even used the back of a table knife to scrape off the top &#8211; they&#8217;ve seen me make cookies often, but the knife thing was new.  We guess how many tsp make a Tbsp.  We had guesses 4 &amp; 5.  Turns out I was made to teach math &#8211; to Kindergarten&#8217;rs.</p>

<li class="instruction">Beat sugars, butter, vanilla on low until well blended.</li>

<li class="instruction">In small bowl measure(properly) all dry ingredients except for choc. chips.</li>
<li class="instruction">Add dry to butter mixture, and mix.</li>
<li class="instruction">Add choc chips. Blend.</li>
<li class="instruction">On ungreased cookie sheet, drop heaping tablespoons 2 inches apart.</li>
<li class="instruction">Bake 8 &#8211; 10 min until lightly golden. Cool 1-2 minutes. Remove to rack. Cool completely. Seal in air tight container right away to preserve freshness.</li>

<p>1.  Most of the ingredients are naturally gluten free</p>
<p>2.  The recipe doesn&#8217;t rely on the gluten-ous texture of the flours to create the texture of the whole thing.</p>
<p>This beautiful bar fits the bill:</p>
<p>1.  The filling is gluten free.  If you use gluten free oats, the crumb crust &amp; topping is mostly gluten free too.</p>
<p>2.  Substitute the 1 cup flour with the standard gluten free mix that you use, plus 1 tsp guar gum.  Since the texture of the bar doesn&#8217;t rely on the flour, you&#8217;re golden!</p>
