This easy recipe is the foundation for my slight variation:

Photo from LifeMadeDelicious

1 beef sirloin steak, 1lb
2/3 cup Gluten Free balsamic vinaigrette dressing
1 bag (6 oz) fresh baby spinach leaves
3/4 cup crumbled goat feta cheese (3 oz)

Directions:

Set oven control to broil. Spray broiler pan with cooking spray. Place steak on broiler pan; brush with 1 tablespoon of the dressing. Broil with top about 4 to 6 inches from heat 10 minutes. Turn steak over; brush with another 1 tablespoon dressing. Broil 5 to 10 minutes longer or until meat is desired doneness (145°F for medium-rare). Cover; let stand 5 minutes.

Thinly slice steak across the grain to serve

Serve spinach, cheese, salad dressing and steak separately. Let everyone pile on their favorites! (Ranch dressing will be yummy too!)

We were sent a Smart Fiesta Hard Taco dinner kit to try. I love tacos – we have them on a weekly basis.

They’re healthy, easy, and I always have the ingredients on hand.

Sign up for the coupon at Life Made Delicious – Old El Paso.

Since my kids (& their mom) don’t like spicy, we forgo the seasoning and use this for a sweeter version:

ground beef, scramble fried

1 can maple brown beans

1/2 cup chopped onion

Sautee all together and add to your taco with your favorite toppings:

chopped tomatoes

shredded lettuce

shredded cheddar cheese

sour cream

chili sauce (heinz)

Enjoy!

My (in)famously easy-peasy recipes. It is a sure fire hit with the kids as long as the mushroom pieces aren’t visible. And with Campbell’s Premium Ready-to-Serve tetri packs in Canada, the mushrooms are teeny tiny. Which suits my don’t-know-better kids and their mother too. This is the perfect meal for a surprise dinner guest as well – easily expandable. And a nice warm winter comfort-food for many. (many who like meat, that is)

Ingredients:

gluten-free mushroom soup (1 liter)

1/2 onion, chopped

1/2 pkg GF onion soup mix

1lb ground beef

450g of rice noodles, cooked according to pkg directions.

1/2 cup sour cream

Directions:

scramble fry beef in large skillet, add onions, and fry until golden.

add soups, add water if necessary, cover and simmer 5 minutes – until warmed through

cook noodles according to pkg directions

Remove beef mixture from heat, stir in sour cream and serve over noodles.

Let me know what you think!

Its been a while, folks. I had all but given up on my ability to cook there for awhile. But the last week or so has seen a little revival in mama’s cooking spirits. And tonight, there was EVEN a little spark of creativity! This is a new favorite with the kids too!

Ingredients:

1lb ground beef

2 Tbsp Club House All-in-One Thai Seasoning

1/2 tsp curry (you can vary this according to your family’s preference)

dash ground pepper

1/2 tsp salt

1.5 cups water

1.5 cups milk (or cream, if you have it)

2.5 cups shredded cheddar cheese

frozen GF (of course!) french fries

Instructions:

Cook the fries according to pkg directions.

Scramble fry the beef, with all the seasonings

Once cooked, add the water and bring to simmer.

Slowly pour 1 cup of hot seasoned beef to milk. Stir. Add milk mixture to pan. Heat to simmer.

Mix together 2 Tbsp cornstarch and 2tsp water. Add to the saucepan. Heat to thicken.

Remove from heat, stir in cheese until melted.

Serve the fries on a plate with sauce on top.

Extra sour cream and/or shredded cheese for garnish (if you are garnish-inclined.)

Voila! An international experience (I’m not sure which nation, but whatever…)
