Hostess Gifts in 10 minutes flat!

Candy Cane Candy bark!  We made a cookie sheet of it, and broke it up, bagged it, and are delivering to neighbors & friends this week.  The kids had a blast smashing the candy canes! :)

Peppermint Candy Cane Bark

Cook time: 8 mins
Total time: 10 mins
Serves: 20
Gluten free and easy gift – ready in 30 minutes.
Ingredients
  • 1 lb white candy melts (gluten free – means do NOT get them from open bulk containers)
  • 1/4 cup vegetable shortening
  • 4 drops red food coloring, optional
  • 300g chocolate chips
  • 3 Tbsp vegetable shortening
  • 4 – 10 drops peppermint extract – to taste
  • 6 candy canes, crushed
Instructions
  1. Melt the white candy melts & shortening in a double boiler
  2. Prepare cookie sheet with parchment paper or tin foil
  3. When all melts are dissolved, add peppermint extract, stir well
  4. (optional – add red food coloring to top of double boiler, stir 6 times lightly for a swirl effect)
  5. Pour onto cookie sheet, spread evenly
  6. Melt chocolate chips in same double boiler, stirring to an even color until completely melted.
  7. Pour chocolate chips & shortening evenly over white layer. Take knife and swirl the two layers together.
  8. Top with crushed candy canes before the chocolate chips set.
  9. Put in freezer to set in 5 minutes.
  10. Remove, break into pieces and put in pretty bags for gifting!

An Almost Sleepover Birthday Party!

Last weekend, we put together my youngest (she’s 6 now!!) daughter’s birthday party!  I LOOOOVE going completely bonkers with parties.  It is my entertainment – something for which to drag myself away from the computer.  Since my daughter is only six, and sleep is really important, we had an ‘almost’ sleepover party with all the girls going home at 8pm!

Here’s the invites, and printables (example).

The banner hung on the wall under the twinkle lights.  The circles were punched out with a scalloped 2″ square punch, glued on juice boxes with a tulle bow, and the left & right edges glued together to make an ‘envelope’ for the straws.  They can also be used for cupcake toppers if you have cupcakes.  Thank you tags were fixed to the white craft bags with teddy bear beads and ribbon.

The invites said, “Its an Almost Slumber Party”, Please bring your PJ’s, sleeping bag or comforter, and pillow.  Time: 5:30 – 8pm

Gluten Free (Betty Crocker) Chocolate Cake

Sugar-coated Pretzels

It is ridiculously easy to coat anything with candy melts.  You just melt them in the microwave, add food coloring and drizzle or dip your sweet goodies.  We found sugar free candy melts from the Galloways.  The pretzels above are wheat pretzels, but this will work just as well with GF pretzels.  We used purchased pink sugar for coating.  Just never use bulk-baking goods if you’re party must be Gluten Free!

Sleeping Teddy Bear Soda Crackers (not GF)

There are Gluten Free Teddy Graham crackers/cookies you can purchase from the grocery store. These ones are wheat based. We broke off the bodies of the teddy bears – the girls thought this was pretty fun because they got to eat the bodies. Then we dipped the crackers in candy melts. The salty cracker and sweet candy melts were YUMMMY.

Favors

Favors for the sleepover party included: mini flashlights with tulle bows, stickers, candies, assorted princess favors(bracelet, ring, activity sheet, pencil).

I couldn’t have asked for better flashlights! These were the kind that you have to hold down the button to keep them ON which worked great – the batteries lasted the whole night!

Cutest Birthday Girl Ever

The party table is behind her and the birthday cake.  I didn’t get a good picture of the food table set up properly.

Food

  • Make your own pizza (we used English muffins and pizza toppings).
  • Yogurt tubes,
  • fruit tray (with cream cheese dip)
  • sweets & cake
The cake was SUPER easy to make! We used Betty Crocker GFree Chocolate Cake mix and pre-mixed whipped white frosting (2 cans).  We cut off a wedge of the cake to make the dip where the teddy bears would sleep.  The the cake is covered in white frosting.

The ‘blanket’ is died pink, and then just dropped on top in big dollops letting it droop over the sides like a comfy comforter.  The pillow is gobs of icing.  And the teddy bears were made from Marzipan.  I found marzipan “potatoes” – I have no idea why there was marzipan colored to look like potatoes (xmas thing maybe?) but it worked fabulously to make these cute teddy bear heads.

Decor

It was super easy to decorate with lights everywhere! We put up twinkle lights, some pink streamers, and the birthday banner – thats it!  We added some balloons for play and it was beautiful!

Table

Set with 2 layers of table cloths.  DIY pizza was set up on the first layer.

TIP: cover your oven tray in tin foil and use a permanent marker to mark each girls pizzas to keep them organized.  

Once the pizzas were made and slipped into the oven, we removed the entire top layer – table cloth and all – and tossed it!

Second layer Table:  white tablecloth, purple napkin, white plate, utensils and yogurt tube were wrapped in a pink napkin.  Utensils were placed beside plate, with a tulle-wrapped juice box at the top of it.  Plate had the sleeping teddy bear cookies on each.   Center of the table was decorated with twinkle lights, and the fruit trays.  We had flower center pieces but they weren’t needed.

Activities

  • The girls when they arrived, set up their sleeping bags and pillows and just had a great time hanging out on the carpets and pillows.  This was a first sleep-over for most of them.
  • DIY Pizza
  • Dinner – grabbed plates of fruit & yogurt and then ate pizzas when they came out of the oven
  • Build a Bears – once we opened the packages we figured out that it would require more sewing than the girls were capable of. Thank goodness I had 2 pre-teen helpers!  So we sewed while the girls…
  • had FAR MORE fun just letting loose and running around with flashlights.  They climbed under the table and had story time (all their own idea).  They took turns shining their flashlights at their faces and then telling “Once upon a time” stories.  It was absolutely adorable to listen to.  For the most part they retold their favorite disney stories.
  • Opened presents – we tried the two chairs thing this year – it worked beautifully, the girl gifting Megan sat next to her and Megan said thank you before opening the present.
  • We still sewed.
  • Then they played balloon tag, and flashlight tag.  And squealed and screeched a LOT.  It was absolutely brilliant!
  • And we sewed some more.
  • Then the girls decided to play with Megan’s new presents.
  • And we almost finished sewing in time to pack up the teddy bears and send them home!

A Gluten Free Spa Birthday Party – 11 year old

What do you do with a daughter who has a sugar-restricted diet, and a husband who has a gluten-free diet?  You don’t focus on food! The party was a blast – and the food was really, truly, just an after thought.  After a couple hours of spa-ing, we were all a little famished.

We sent out Spa Appointment Cards that said:

Haley's Spa

The door was decorated with plastic pink tablecloths that were huge when unfolded, and went from ceiling to floor and were tied with ribbons.  It made for a fast, dramatic effect.

We covered all the windows and several walls with the drawn ‘curtains’.  It made for a pink glow which I wasn’t really expecting but it added to the ambiance.  I found nylon wall decor on clearance for $2 of cherry blossoms and branches – it was perfect!  I plastered that all over the main wall where the facials table was.  And then covered that floor to ceiling with lace curtains.  The effect was great!

There was an entry bar-height table that we had laid out pink tablecloth with silk pink flowers and champagne flutes filled with sparkling juice (from Ikea).  My two youngest (5 yo, and 7 yo) carried around trays decorated with pink covers, silk flowers, and offered the girls each a pair of flip flops as they arrived.

As they came in, they walked past the laid-out facial table.  It was decorated with white tablecloth, placemats that said, “Haley’s Spa” on them, and then covered in a plastic tablecloth.  Each girl has a new face cloth wrapped in ribbon, a white clean bowl in the center, and a labeled rose water container by their place.  We had scented candles along this table that were lit before the girls arrived.

The guests then took their flip flops to a carpeted area in the middle of the room, where we had flung every cushion we had at home, and left out a huge basket of ripped fabric scraps in coordinating colors.  The big wall next to the carpeted area was flanked by pink curtains that were held back with ribbons, in preparation for the movie.

At the far end of the room was the buffet table, which was laid out with goody bags, “Spa water” (water bottles), sugar-free candy dishes, labels, and utensils.  And a seating area for the girls with a pink tablecloth, white charger, and pink plates.  Each girl had a wine glass at their seat, with flowers and candles strewn about.

Activities

Spa Footwear: The first order of business was tying the material scraps onto their flip flops, while sipping their ‘champagne’.  They stayed at this activity for awhile until all the girls had arrived and kicked out their parents.   We got the inspiration from this Family Fun article.

Facials: As much as I tried, I could not convince a cosmetology student to come and give the girls a lesson, so it was left to me.  I did my best with my limited knowledge – using the 3 step system of cleaning, toning, moisturizing.

We added a chocolate face mask recipe that I got from here. And we made ahead the rose water, but we didn’t like the rosemary herb in it that our recipe called for – this recipe seems a lot better.   The cleanser and moisturizer I bought at the store (it was cheaper than homemade if you can believe it!!) and asked the cosmetics counter lady for tips on purchasing one for pre-teen skin.   I taught the girls the circular motion for application, and about using a wash cloth for gentle exfoliation.  They seemed pretty interested in using the ‘gentle’ fingers on their hands too.  I was a little surprised by how interested they were!  And – the chocolate face masks – oh my!  They had a BLAST making applying eating these!

Musical Pedicure: This was an upbeat activity.  We set up a circle of chairs – one for each participant.  And I put one different nail color under each chair.  Then we played musical chairs – except we did not remove a chair – we made them paint a toe nail with that chair’s polish.  They had a blast!  One warning – next time, we’ll use a drop cloth under them!  They spilled nail polish everywhere!

Eye Mask Building Contest: This was more relaxed.  We got in pairs, and the girls built a tower of cucumbers on the other girls’ stomach.  It was a contest to see who could build the highest tower.  We used ribbons to measure.  I had thought the girls would be full of giggles – but they were very quiet and competitive the whole time.  It was kind of funny how seriously they took this!

Prizes: We provided prizes of bangles, temporary tattoos, a summer scarf, and a make-up bag.

Refreshments: As I said, food was not the focus this time. And it didn’t seem to be missed either.  During the musical pedi’s my youngest girls served the party-goers chocolate dipped strawberries, which also ended up all over the floor!  (Note to self: DROP. CLOTH.)  We served the girls pre-arranged wraps (ham or turkey, cream cheese, julienned peppers), and a fruit platter with cream cheese dip.  We had also arranged a smoothie station from the Life Made Delicious easy-recipe-collection but we ran out of time!   When they had finished eating, we served them a Splenda cake from a local bakery.  (I know you may hate me – Splenda is NOT good for people, but for my daughter, its better than sugar! Email me if you want to know more!)  I had planned on the girls stuffing their bags with the sugar-free candy but they managed to eat it all up during the party instead.  :)

Movie & Manicure: Then we started the movie only 10 minutes later than planned!  They watched Sharpay’s Fabulous Adventure and I did mini-mani’s on all the girls.  I had only 10-15 minutes per girl.  So I placed two bowls one for each hand on each side and had them soak for a minute, while I groomed one hand.  Then I polished and put nail art stickers on them.  It was so simple and they seemed so pleased!

Party Favors

Their thank-you bags were filled with their flip-flops, personal-size rose water, pink emery board, and a recipe booklet with all 4 recipes (cleanser, toner, mask, moisturizer).

So you wanna cook for the celiac?

I’m re-posting this for those who are attempting a gluten free Easter dinner for the first time.   Your loved ones with diet restrictions are lucky to have you!  If you have any questions leave me a comment on this post and I’ll do my best to email you as soon as possible.   Happy Easter!

This is especially for those who are searching the web looking for how to cook a main course for the celiac person on the guest list.  Whether you’re used to the world of “cross-contamination” or host to the annual family gathering, this can serve as a handy reminder!  I’ve written these tips with a New Year’s Day celebration in mind, traditionally a rack of lamb or braised ribs.

GF Cooking Primer

Preparation:  Before you begin – clean, clean, clean: counter tops, roasting pans, knives, and utensils, (pay special attention to the cutting board and try to use one that isn’t porous in nature).  Use fresh tin foil if you’re wrapping the ends of bones (Who would have thought fresh and tin foil could go in the same sentence?)

Selection:  Use unseasoned meat cuts, and season with your own gluten-free (non-bulk) spices.

Seasonings & Sauces: Rub and roll(ie: rosemary), or tenderize and insert(ie: butter) your seasonings and spices for a truly gourmet taste!  Pre-bottled seasonings and sauces contain the risk of gluten so avoid these if you can.

Cooking:  The best tip for a main course isn’t reserved for gluten-free cooking only:  Buy the best cut you can afford and cook for the least amt of time required!

Gravy:  Gravy can be thickened with a mixture of cornstarch and water.  Mix cornstarch and cold water separately.  Add gradually to hot drippings, whisking continually, until thickened.  Do NOT use bottled seasonings without checking thoroughly for gluten.  Gluten is usually present in beef bouillion, soy sauce, and gravy thickeners.  Be careful to use fresh and non-contaminated ingredients.  Contamination is often present in the butter dish, and corn starch.

Serving:  Now if only you can get it onto the celiac’s plate without someone contaminating it!  If you have also prepared dishes containing gluten, be sure to provide unique serving utensils for each dish, and watch that children(& grown ups) don’t double-dip their butter knives. Also, if you are baking pies or desserts with gluten, be sure to cover the serving dishes and eating dishes for the celiac.  You don’t want flour to inadvertently ruin your careful cooking!

The Craziness of it all:  This may sound ridiculous at first, but that is because this reaction is often misunderstood. You know how someone with hay fever only reacts during hay season or when the pollen gets in his nose?  That is an allergy.  Celiac is NOT an allergy – it is an auto-immune disease.  One molecule (there is a particular name but who cares…)smaller than the human eye can see, is enough for his body to go on high alert.  The celiac’s body will misinterpret that one molecule as a threat – and begin fighting by breaking down its own intestines.  For most celiacs this is excruciating and can take days to weeks to recover from that single molecule.  So I’m sure your GF friend or relative will appreciate all your efforts immensely, but understand that they may or may not be up to taking the risk of eating in someone else’s home.
