Sesame Mandarin Salad

I just tossed this together this afternoon – it was delish!

  • spring mix salad
  • 3 Tbsp cooked, crumbled bacon bits (I use prepared, store bought from Kraft)
  • 2 Tbsp Renee’s Sesame Asian Vinaigrette
  • 1 small can of mandarin oranges, drained
  • 3 Tbsp sliced almonds

- I’m still undecided whether I like the bacon bits in it, although it gave it a different flavor, which I really enjoyed. The only reason I added them was to try and increase the amount of protein in my lunch. All in all – another success!

Broccoli & Toasted Almonds

Seriously.  That’s all it is.  Love it!

  • Toss 1/4 cup or so of sliced almonds in the toaster oven/ frying pan.  Cook over med-high heat until browned.  Stir often.
  • Steam broccoli to your liking.
  • Toss together with a pinch of garlic salt.

Salmon & Almond Salad

Even the kids ate this one!  It was so yummy.  We presented all these ingredients in separate bowls and dished it out as desired.  I suppose it could all be tossed together too though.  :)

Ingredients:

  • spring mix salad, bag (approx 6 cups)
  • 1/2 cup blueberries
  • 1/2 cup grapes (optional)
  • 1/2 cup candied almonds
  • 4 servings glazed salmon
  • 4 Tbsp sunflower seeds
  • 4 Tbsp Kraft Raspberry Vinaigrette salad dressing

Enjoy on a nice hot summer day, my friends!

Candied Almonds

Like most candy, this is really for adults-only to do.  Sugar boils hotter than oil and water and will burn incredibly well into our skin.  It is to be handled with care!

Ingredients:

  • 1/2 cup almonds, sliced
  • 1/2 white sugar

Directions:

  1. Heat skillet on med-high heat until hot.
  2. Add sugar & almonds.
  3. The sugar will melt, at this point it is only seconds away from being toasted or burnt.
  4. Stir constantly until they are toasted a light golden brown.
  5. Remove immediately from pan onto wax or parchment paper.

And please!  Be careful.  Once cooled, break apart and place in air tight dish.  These are fabulous on any summer salad!

Berry Yummy Salad

* NEVER refer to this as spinach salad * :)

  • bunch of fresh spinach, washed dried whole
  • 1 cup of fresh berries, (bet you’d never guess I like strawberries on mine)
  • 1 cup almonds
  • 1/2 cup white sugar (for almonds)
  • 1/2 cup sweet grapes, halved

Dressing:

  • 1 tbsp rice vinegar (it has a nice light flavor)
  • 1 Tbsp EV olive oil
  • 1/2 tsp poppy seeds
  • 1 tsp sugar
  • dash of salt & pepper

Candied Almonds:

  • place sugar & almonds in pan.  Turn to HIGH.  *Note: this is not the recipe to start little Betsy on*
  • Remember that sugar boils MUCH hotter than water.  So be careful getting this on your skin would mean instant blisters and burns.  Maybe even a trip to the doc.
  • Use a wooden spoon and stir constantly.
  • When the sugar melts and starts to go a golden color, it will finish very quickly.  Less than a minute to go.
  • Keep stirring until the almonds are coated.  And not burned!  Remove from pan right away on to sheet of parchment paper.
  • Once dried, break apart into little pieces and store.  Use 1/2 cup(or more) for this Berry Salad.

Directions:

  1. Place dressing ingredients in small air tight container.  Shake.
  2. Toss spinach with dressing.
  3. Top with almonds, berries, and grapes.
  4. Enjoy!
