Cheesy Broccoli Bacon Bake

Comfort food to the extreme! The recipe is all my favorites: cheddar, potatoes, bacon, broccoli.  Tossed together in a creamy sauce and topped with more cheese.  Yum!

Cheesy Broccoli Bacon Bake

Yield: 6 servings

Cheesy Broccoli Bacon Bake

Ingredients

  • 1/2 lb bacon
  • 1/2 onion, chopped
  • 1/2 head broccoli florets
  • 4 med potatoes, cubed
  • 1/2 cup chicken broth
  • Blend 2 Tbsp corn starch, 4 Tbsp water. Shake.
  • 4oz cream cheese
  • 1 cup shredded cheddar cheese
  • salt & pepper

Instructions

  1. Fry bacon in large skillet until crispy. Remove bacon from pan. Crumble.
  2. Add chopped onion and fry in bacon grease until light brown.
  3. Add bacon back to pan, with the cream cheese, Stir to combine.
  4. Add chicken broth & potatoes, salt & pepper. Stir to combine.
  5. Cover and simmer 5 minutes. Add broccoli.
  6. Cover and simmer again until potatoes are soft (approx 5 more min).
  7. Remove from heat, add cheddar cheese. Stir to combine.
  8. Put it all in a casserole dish and heat through in 350 oven for 30 minutes.

Fried Rice with Chicken and Broccoli

This came of necessity since I had about 8 cups of rice in the fridge!  I made a tad more than I needed last week.  lol

  • 3 Tbsp oil (I use half olive, half canola)
  • 3 defrosted skinless, boneless chicken breasts, cubed
  • 1 carrot, thinly sliced
  • 1/2 onion, thinly sliced
  • 3 cups of broccoli (I used frozen)
  • 4 cups of cooked rice
  • 1 cup hot water
  • 2 Tbsp chicken bouillion
  • 1/4 cup soya sauce
  1. Cook the chicken in the oil.  Add the soya sauce and garlic.fried-rice
  2. When cooked, add the carrot, onion, and broccoli.  Cover.  Cook for 4 minutes, until broccoli crisp-tender.
  3. Uncover, add seasonings and rice, stir over medium heat until heated through – approx. 10 minutes.

This would make a superb treat for the celiac in the crowd.  For those new to cooking for a food allergy – the only 2 ingredients in here that may cause problems are the sour cream and mayo – you either need to use a freshly opened jar/container or be a fanatic about your butter knife and serving spoons(in other words the utensils are CLEAN when they go into the jar so as not to leave bits of bread in the mayo jar…)

Hot Broccoli Dip

Ingredients:

  • 1 head broccoli, chopped (I use 4 cups frozen)
  • 1/2 red pepper, chopped
  • 2 Tbsp Mayonnaise (Real Hellman’s Mayo in Canada is GF) (Not contaminated by other users)
  • 1 cup cheddar, grated
  • 2 cloves garlic (i use 3 :) ), minced
  • 1 Tbsp chopped onion
  • 1 cup sour cream (not contaminated by other users)
  • 1/4 tsp black pepper
  • 1 bag tortilla chips

Instructions:

  1. Mix all together
  2. Bake @350° for 20-25 minutes
  • Serve hot with chips for dipping.
  • Tomato Brown Rice & Flank Steak

    This was a very healthy & kid-tolerated meal.  Perhaps they weren’t jumping up and down about it, but we’re working on it.  :)

    Brown Rice with Tomatoes

    In a rice cooker, combine:

    • 1 cup brown rice,
    • 2 cups water, and
    • 1 large can (16oz) stewed tomatoes,
    • 1.5 tsp Italiano Seasoning.

    Set that to cook one hour in advance.  Let `keep warm`without lifting the lid for nearly an hour.

    Italiano Flank Steak

    This I discovered quite by accident.  I forgot to remove the meat from the freezer, and managed to half-cook it in the microwave under the guise of `defrosting`.

    • 12 oz flank steak, defrosted or partially cooked in microwave by mistake
    • 1 tablespoon Italiano seasoning

    Seriously – that`s it.  Told ya it was easy!  Place steak in frying pan.  Fry (no oil needed) 5 minutes over medium heat on both sides, or until desired doneness.

    We put the rice, and steak with steamed broccoli, and it was delish!

    Broccoli & Toasted Almonds

    Seriously.  That’s all it is.  Love it!

    • Toss 1/4 cup or so of sliced almonds in the toaster oven/ frying pan.  Cook over med-high heat until browned.  Stir often.
    • Steam broccoli to your liking.
    • Toss together with a pinch of garlic salt.

    Hot Broccoli Dip /makes a quick meal too!
