Tangy Pork Tenderloin – Diet Friendly

This would work beautifully wrapped in foil and barbecued too!

You’ll need:

  • 1 lb tenderloin
  • 1 cup whole cranberries, fresh or frozen
  • 1/4 c. chopped onion (approx.)
  • 4 g. splenda
  • 1/4 c. water

It couldn’t be easier! Check it out:

  1. Combine all ingredients except the tenderloin, and stir until sweetener is dissolved.
  2. Place tenderloin in oven-safe dish and bake at 350° or barbecue meat and simmer the sauce over low heat.
  3. Cook until internal temperature reaches 160 – approx 20 minutes for the overn, and less for the BBQ.

And, friends, I SWEAR I took pictures.  I remember taking pictures, because the juice stained the meat a funny pink color!  But alas, they were eaten by the mean picture-eaters.   But in my searching I found this:

Weight Watchers Points:  4oz meat, and 1/4 cup sauce = 4pts.

Center Pieces With things On-Hand

We are SO past Thanksgiving in Canada, but here’s a little tip for y’all (will work at Christmas too).  The easiest centerpieces in the world are those centered on food ingredients. Here’s a few things we’ve done.  Not that I have pictures or anything.  Yeesh.  Lower your expectations people.

  • Apples, mini-pumpkins, and gourds.  With the top stem part cut out leaving enough room to squish in a tea light.  Push it down enough that the tea light container is hidden in the apple.  Place several apples around the center of the table, and have the kids find some fall colored leaves to scatter at the bottom of them.
  • Cranberries, evergreens, tea lights: these little fellows float – fresh or frozen.  So it is very pretty to get some glass dessert bowls, sugar bowls, vases, or glass bread pans and fill them a couple inches high with water.  gather some evergreen branches to pop in the bottom.  Scatter some whole cranberries along the top.  And then use tea lights, remove the tea light container, and they’ll turn into floating tea lights.  Just don’t get water on top of the candle.  Ha!
