Cheesy Broccoli Bacon Bake

Comfort food to the extreme! The recipe is all my favorites: cheddar, potatoes, bacon, broccoli.  Tossed together in a creamy sauce and topped with more cheese.  Yum!

Cheesy Broccoli Bacon Bake

Yield: 6 servings

Cheesy Broccoli Bacon Bake

Ingredients

  • 1/2 lb bacon
  • 1/2 onion, chopped
  • 1/2 head broccoli florets
  • 4 med potatoes, cubed
  • 1/2 cup chicken broth
  • Blend 2 Tbsp corn starch, 4 Tbsp water. Shake.
  • 4oz cream cheese
  • 1 cup shredded cheddar cheese
  • salt & pepper

Instructions

  1. Fry bacon in large skillet until crispy. Remove bacon from pan. Crumble.
  2. Add chopped onion and fry in bacon grease until light brown.
  3. Add bacon back to pan, with the cream cheese, Stir to combine.
  4. Add chicken broth & potatoes, salt & pepper. Stir to combine.
  5. Cover and simmer 5 minutes. Add broccoli.
  6. Cover and simmer again until potatoes are soft (approx 5 more min).
  7. Remove from heat, add cheddar cheese. Stir to combine.
  8. Put it all in a casserole dish and heat through in 350 oven for 30 minutes.

Healthy Christmas Eve Appetizers & Cheese Balls Recipe

It just wouldn’t be me if I wasn’t running late and planning my Christmas Eve on Christmas Eve!  No matter – these are yummy and made with ingredients on hand! Even better than that – these are  all gluten free, sugar free, and easy-peasy!!

Does that not say Christmas & FEED ME at the same time?

No-Bake Cheese Balls Recipe

  • 1 pkg cream cheese, softened
  • 1 c cheddar cheese, shredded
  • 1/2 tsp garlic pwd
  • 1/4 tsp onion pwd or 2 green onions, finely chopped
  • crushed walnuts (optionally – used finely chopped fresh parsley or powdered paprika for Christmas colors)

Mix first 3 ingredients together.  Refrigerate one hour.  Shape into 1″ balls, and roll in nuts.

Favorite Dessert This week: Cheesecake!

In an instant of sheer brilliance, we purchased a frozen cheesecake for our daughter’s 9th birthday party.  It didn’t occur to me before this, that the cake might actually be gluten free! Come to think of it, my favorite cheesecake is nothing more than eggs, sugar, and cream cheese!  So, yeah, in its truest sense, it IS gluten free!

Is that not the best news ever?!?

Yes, there is a slight chance that you already knew that.  But how can I keep news like this to myself??
Here’s the one that always works for me – the classic cream cheese cake – from the Philadelphia Cream Cheese package:

  • 3 bricks (250g) of cream cheese, softened
  • 3 eggs
  • 3/4 cup sugar
  • 1 tsp vanilla
  1. Preheat oven to 325, spray/coat 9″ springform pan
  2. combine cream cheese, sugar, and vanilla until well blended.
  3. Add eggs, one at a time, just until blended.
  4. Pour into prepared pan.
  5. Cook for 45 – 50 minutes until center is just about set.
  6. Cool, remove rim, refrigerate for four hours until set.

As long as you don’t contaminate your cheesecake with a dirty springform pan, you have a perfectly delicious and gluten free cake!

Dream Jello “salad”

I just love that these jello moulds are called salad – it is a perfect accompaniment to the burgers and hot dogs that will be barbecued soon. Of course we all know that it IS dessert. ;)

Ingredients:

  • 2 pkg raspberry jello (the small 4oz ones)
  • 2 cups hot water
  • 1 cup cold water
  • 1 can strawberry / raspberry pie filling

Topping:

  • 8oz cream cheese
  • 1 tub cool whip (The Kraft brand of this “edible oil byproduct” IS gluten free in Canada) It probably is horrible for your body – but tastes like heaven!
  • 1 can crushed pineapple, well drained

Directions:

  1. Dissolve the jello in the hot water. Completely.
  2. Mix all the jello ingredients, and pour into 9X13 pan. Chill until firm (several hours)
  3. Blend topping ingredients, spread over jello.
  4. This can be served right away, or kept refrigerated until needed.
