TOTALLY ran out of veggies a couple days ago. You just gotta have something fresh with Shepherd’s Pie, no? Here’s something similar to my Mom’s cucumber salad when I was growing up:
cucumber (okay, so I did have a cucumber), sliced
drizzle EVOO and white rice vinegar
dash of Italiano seasoning
Serve: crunchy, crispy, fresh, yummy!
