Pork Tenderloin with Mushroom Sauce

I love pork tenderloin – it is fantastically cheap.  And it is delicious, when I manage not to cook it to death.  This recipe is my gluten-free & Cathy-fied variation of this easy recipe from Life Made Delicious.

Pork Tenderloin with Mushroom Sauce

Ingredients

  • 1 pork tenderloin, sliced into 3/4 inch thick slices
  • 1/4 cup water, and 3 Tbsp cornstarch
  • salt & pepper
  • 2 tbsp olive oil
  • 1 c chicken broth
  • 1 c sliced mushrooms
  • 1-2 tbsp Dijon mustard

Instructions

  1. In 12-inch nonstick skillet, heat oil over medium-high heat. Cook pork in hot oil 4-6 minutes per side, until no longer pink in centre. Remove to serving plate; cover to keep warm.
  2. Add mushrooms. Stir fry until brown and softened. Stir broth into skillet. Heat to boiling over medium-high heat. Stir in mustard.
  3. Combine water & cornstarch. Cook 2 to 3 minutes, stirring frequently, until slightly thickened. Spoon sauce over pork.
  4. Serve with rice or noodles!

Peppermint Candy Cane Bark

Gluten free and easy gift – ready in 30 minutes.
Ingredients
  • 1 lb white candy melts (gluten free – means do NOT get them from open bulk containers)
  • 1/4 cup vegetable shortening
  • 4 drops red food coloring, optional
  • 300g chocolate chips
  • 3 Tbsp vegetable shortening
  • 4 – 10 drops peppermint extract – to taste
  • 6 candy canes, crushed
Instructions
  1. Melt the white candy melts & shortening in a double boiler
  2. Prepare cookie sheet with parchment paper or tin foil
  3. When all melts are dissolved, add peppermint extract, stir well
  4. (optional – add red food coloring to top of double boiler, stir 6 times lightly for a swirl effect)
  5. Pour onto cookie sheet, spread evenly
  6. Melt chocolate chips in same double boiler, stirring to an even color until completely melted.
  7. Pour chocolate chips & shortening evenly over white layer. Take knife and swirl the two layers together.
  8. Top with crushed candy canes before the chocolate chips set.
  9. Put in freezer to set in 5 minutes.
  10. Remove, break into pieces and put in pretty bags for gifting!

Mango Chunk Dessert

Today is a simple post. With a very yummy twist – dessert. I’m not trying many new desserts, therefore not posting many new dessert recipes. But today? Dessert, baby. Read carefully. It might get tricky.

  1. place several in bowl
  2. Do not thaw.
  3. Do not share :)

 

Golden Chicken & Sweet Potato (NOT!)

This is the recipe (story follows below):

Ingredients

  • 1 Tbsp veggie oil
  • 2 chicken breasts, defrosted
  • 1 cup chicken broth (I use Knorr Chicken Broth powder and hot water)
  • 1 Tbsp garlic, minced
  • 1 tsp rosemary, dried
  • 1/2 tsp thyme leaves, dried
  • 2 large, peeled sweet potatoes, cut into 1 inch cubes
  • 2 cups veggies – we used green beans

Instructions:

  1. Brown chicken in hot oil, approx 5 min per side.  Remove & set aside.
  2. Stir in broth, seasonings and veggies.   Bring to gentle boil.  Boil 5 minutes.
  3. Cut up chicken into bite size pieces, return to pan.  Reduce heat to simmer.
  4. Cook until chicken is done, and veggies are tender, about 7 – 10 minutes.

Story:

This recipe is loosely based (how I follow all my recipes) on a Campbell’s recipe from my local grocer’s flyer.  It called for Sweet Potatoes, and being myself a brand new, sometimes-strict, self-proclaimed GREEN, CLEAN, and LOCAL eater, I sent my husband out for exactly – SWEET potatoes.  He came back with white potato-looking things.  I quizzed him (he’d call it grilled) emphatically about the labeling of said ‘sweet’ potatoes.

Do those potatoes look WHITE to you?  Perhaps its the wizardry of photoshop I tell myself.  Or maybe gluten-carrying chicken broth has more dye in it (I’m kidding btw).  I have checked 3 different local markets, all our sweet potatoes are WHITE.  Our YAMS are orange!  So I’ve discovered, its all you Americans who have labeled everything wrong.  Just to let you know – those orange things, those are YAMS.  What you want in your recipe here – is Sweet Potatoes.  Yummmm!

Beef Stroganof over Noodles

My (in)famously easy-peasy recipes.  It is a sure fire hit with the kids as long as the mushroom pieces aren’t visible.  And with Campbell’s Premium Ready-to-Serve tetri packs in Canada, the mushrooms are teeny tiny.  Which suits my don’t-know-better kids and their mother too.  This is the perfect meal for a surprise dinner guest as well – easily expandable.  And a nice warm winter comfort-food for many.   (many who like meat, that is)

Ingredients:

  • gluten-free mushroom soup (1 liter)
  • 1/2 onion, chopped
  • 1/2 pkg GF onion soup mix
  • 1lb ground beef
  • 450g of rice noodles, cooked according to pkg directions.
  • 1/2 cup sour cream

Directions:

  • scramble fry beef in large skillet, add onions, and fry until golden.
  • add soups, add water if necessary, cover and simmer 5 minutes – until warmed through
  • cook noodles according to pkg directions
  • Remove beef mixture from heat, stir in sour cream and serve over noodles.
