Breakfast Wrap

I whipped these up for lunch today actually.  They were quick, included all the food groups, and didn’t have me spending much time around the hot oven: perfect!

  • brown rice wraps
  • mayonnaise
  • 6 eggs
  • 1/2 cup shredded cheddar cheese
  • 3-4 slices cooked ham, chopped
  1. Heat up frying pan and scramble eggs with salt & pepper.
  2. When they are nearly done, add the chopped ham.
  3. Heat through.  Remove from heat.
  4. Sprinkle cheese on top.
  5. While eggs are cooking, toss the wraps in the microwave with a damp towel and heat just a little.
  6. Spread each wrap with mayo, and a scoop of eggs.
  7. Wrap up & enjoy!

deviled eggs

This recipe is loooong overdue – so sorry!  I had originally thought that this would be a no-fly-zone for my girls, but they have reacted surprisingly well to these protein-packed things.  My 4 year old scoops out the yummy insides and eats the egg whites.  My 8 year old eats the yummy stuffing, and doesn’t really like the whites.  My ‘baby’ (ok, she’s actually 2.5 yrs) loves it all!  Hope you get good reactions too!

  • 6 eggs, hard boiled (6 minutes at sea level)
  • 2- 2.5 Tbsp mayonnaise
  • salt & pepper to taste
  • 1/4 tsp onion salt
  1. Boil, and cool eggs under cold water.
  2. Peel off shells, cut in half lengthwise carefully to preserve the shape.
  3. Carefully (but it should be easy)pop out the egg yolks into separate bowl.
  4. Place remaining ingredients with yolks.
  5. whip with fork until well blended.
  6. Drop by tablespoon back into egg halves.

Sprinkle with paprika to make them look pretty.  :)

Mom’s Potato Salad, naturally gluten-free

I adore this potato salad – nothing compares!

Ingredients:

  • 6-7 large, cubed potatoes, cooked just until soft (don’t overcook)
  • 2-3 eggs, hard boiled, shelled & chopped
  • 1 cup bread & butter pickles , chopped
  • 1/2 small onion, chopped

Dressing:
Mix this separately as I’m not sure how much you’ll need on your salad (i don’t use much – others like it bathed in the stuff).

  • 1/2 cup mayonnaise (not Miracle Whip)
  • 1 Tbsp yellow mustard
  • 2 Tbsp pickle juice – Mom’s secret ingredient!

Instructions:

Mix salad ingredients together in large bowl.

Mix dressing separately. Add dressing to taste. Mix well to coat.

This makes a mess of your salad bowl, so take a turn around the edges with a paper towel, and sprinkle paprika on top (just ’cause it’s purdy), and you’re ready for the company picnic!
