This is it. Where the rubber meets the road. The test of the future. The thing of the… oh never mind. Its a menu.

Monday
Brown beans and barbecue sauce wrap (vegetarian)
Lasagne (vegetarian)

Tuesday
Egg salad wraps, sliced cucumber (vegetarian)
Chicken Gumbo (soup)

Wednesday
Poached Herb Salmon
Herbed Rice Pilaf
Honey’d Carrots

Thats all I got folks. Changing the entirety of one’s menu is not easy! Keep hangin’ in there. The results are worth it!

Warm & Cozy Casseroles

Warm & Cozy casseroles – but no veggies made from roots, except carrots. I just don’t think that anything that lives underground, sucks nutrition from dirt should be eaten by humans. Except carrots. Thats entirely different. Don’t judge me. :)

Menu – 2nd week of July

A menu with decidedly light options, with basic carbs thrown in for the kids.

The I-don’t-Feel-Like-Cooking Menu

I wonder if I write enough ideas, I’ll feel like making one of them?  I doubt it, but here we go anyway:

  1. Nachos:  (real corn) tortilla chips (most are gluten free – just check!), cooked hmb, chopped veggies, shredded cheese, nuke in microwave 30 seconds!  Yummy
  2. Rotisserie Chicken from the deli, with baked (in the microwave)potatoes
  3. Hot Broccoli Dip  Again with tortilla chips.
  4. French Fry Scramble  except you DO need to have frozen french fries.  McD?  Ewwwwww.
  5. Breakfast for dinner – cereal, toast, eggs, my kids love this & so does Mommy!  :)

How about some leftovers?

So I kinda missed the Holiday menu planning deadline here.  But how about some great ideas for leftover turkey? In all these recipes, turkey can be substituted for chicken.  If you want a lower fat version, use the white meat from the turkey breast.

Also try an open-faced sandwich with gluten-free bread:

  1. Layer bread, mayonnaise, stuffing(if you have it), turkey meat.
  2. Toast this in toaster oven or under broiler in oven.
  3. Re-heat gravy and pour on top for southern comfort.  For a lower fat version, sprinkle with cheddar cheese before toasting and leave out the gravy.

2 week menu

I confess: I do my menu’s and shopping lists every TWO weeks, so instead of my crafty super-spy idea of separating it into two posts, here’s the regular un-crafty, super-easy way: 

Week 2:

PS – I do these meals in no particular order.  But having a menu is very helpful because I have the ingredients on hand to make all of these, and I can pick one from the list on any particular day and make it!  Except for the shepherd’s pie – I make that the day after I’ve made mashed potatoes.
