Beef Stroganof over Noodles

My (in)famously easy-peasy recipes.  It is a sure fire hit with the kids as long as the mushroom pieces aren’t visible.  And with Campbell’s Premium Ready-to-Serve tetri packs in Canada, the mushrooms are teeny tiny.  Which suits my don’t-know-better kids and their mother too.  This is the perfect meal for a surprise dinner guest as well – easily expandable.  And a nice warm winter comfort-food for many.   (many who like meat, that is)

Ingredients:

  • gluten-free mushroom soup (1 liter)
  • 1/2 onion, chopped
  • 1/2 pkg GF onion soup mix
  • 1lb ground beef
  • 450g of rice noodles, cooked according to pkg directions.
  • 1/2 cup sour cream

Directions:

  • scramble fry beef in large skillet, add onions, and fry until golden.
  • add soups, add water if necessary, cover and simmer 5 minutes – until warmed through
  • cook noodles according to pkg directions
  • Remove beef mixture from heat, stir in sour cream and serve over noodles.

Comforting Rice Casserole

I love this combination with mushroom soup and onion soup mix – creamy, comforting, with a little onion zing.  Yummy.

  • 1 large can prepared GF mushroom soup
  • 1 pkg onion soup mix
  • 1/2 can of rice
  • 1/2 can of water (extra 1/4 can of water if brown rice)
  1. Stir all of it up.
  2. Pour into casserole dish.
  3. Cover, cook at 350°F for 1hour (2 hrs if brown rice).

I added 2 braised pork tenderloins (approx 1.5 lbs) to this and it was officially yuuuuumy.

Swedish Meatballs

This recipe classifies as “easy peasy” if you have the meatballs ready-made and frozen.  The kids just love anything with meatballs in it, so its all good!

  • can of ready-to-serve mushroom soup mix
  • 1 celery stalk, chopped
  • 1/2 onion, chopped
  • meatballs

Directions:

  1. place everything in a roasting/ casserole dish.
  2. Bake at 350°F for 1/2 hour or until it is heated through.
  3. Serve with rice.

Pork Chops with Scalloped Potatoes

This is a make-ahead casserole type dish. You’ll need an hour to cook, and 20 minutes to prep I suspect. But then you pop it in the oven and walk away for an hour. That’s worth it isn’t it?

Ingredients:

  • 4 large pork chops (this recipe is great for those not-so-good cuts)
  • 1 tbsp oil
  • 1/2 pkg of onion soup mix (NN is gluten free)
  • 1/4 cup margarine
  • large can(540ml) of prepared Cream of Mushroom soup (President’s Choice is gluten free)
  • 5-7 large potatoes
  • salt and pepper to taste

Directions:

  • Sear the pork chops (brown on both sides) in oil.  Remove.
  • Wash and slice potatoes (they do not need to be peeled).  Layer in bottom of small roaster.
  • Cut up margarine into chunks/ teaspoons and sprinkle on top of potatoes.
  • Stir together soup mix, mushroom soup, and salt and pepper.   Pour over potatoes.
  • Place pork chops over top the potatoes.
  • Bake at 350° for an hour.

If you mix up a veggie and salad and put in the fridge, then you’re ready to sit on your tush and relax for an hour before dinner!  :)
