Low-fat, Low-point, gluten-free snacks

Hubs is just down-right ticking me off with all his weight loss.  He’s winning hands-down.  And don’t even try to tell me that it isn’t a competition.  If it is something we are both doing, then obviously its a competition.

Oh.

That’s not obvious?  Anyway, here’s my observations from raiding his gluten-free snack cupboard:

3-4% MF Cheese

Freybe Turkey Chicken Pepperoni

Smart Pop Popcorn

Chocolate Crunch Rice Cakes

Crispy Minis:  his fav’s are butter popcorn flavor, and caramel

And of course, the absolute best for you:

If you have some secret super-fab snack, let me know!  I’m sure he’d appreciate it.  :D

Breadless

Yeah.  I haven’t found the perfect bread recipe for Mike (the resident celiac) yet.  So he’s pretty much breadless.  Does that suck?  I would think so but he doesn’t complain about it.  So here’s our substitutes:

Cold sandwiches:  brown rice wraps

Hot sandwiches:  rice “cakes”

Toast:  tapioca & rice English Muffins

Bread Pudding:  just kidding.  Does anyone like this for real?

W/ Soup:  rice crisps or crackers

Dinner Roll: English Muffins

The thing that I would miss the most are muffins and cinnamon rolls.  I saw the coolest looking brown rice cinnamon rolls in the frozen section at Safeway today.  You have to sell a kidney for each one, but they exist.  That’s good, right?  And then I can make some mean banana bread and biscuits from scratch.

Cheese, Please!

I am loving cheese. It has been a yummy addition to our diet in more and more ways.

*  cheese curds melted on fries (poutine)

*  grated parmesan on caesar salad

*  feta cheese crumbled on top of salad

*  cheese sticks for snack time

*  Babybel cheese for snack time too  this is a processed Swiss cheese – sort of creamy – and it comes in little circles which is somehow very fascinating to my girls.  :)

*  melted cheddar on rice cakes

*  cream cheese on rice crackers, topped with pickle slices

* Cheez Whiz on baked potatoes as a topping

Have you tried these?  Do you have other suggestions for our repertoire of cheesy foods?

Another Light Menu

Since no one came up with ideas for me on light food that kids will eat. I suppose I have to do my homework. Here’s some options that I came up with for this week on the lighter, oven-free, side of things.

Sandwiches

This is a bit tricky without yummy bread. If anyone really has a sandwich-ready gluten free loaf recipe, I’m ALL ears! Of course, I’m using my breadmaker ONLY in this weather!

On rice cakes, we use:

  1. melted cheese
  2. lettuce & tuna salad
  3. egg salad
  4. cream cheese & jam

On rice wraps, we use:

  1. cheese & ham & lettuce
  2. tuna salad, lettuce, pickles
  3. peanut butter & jam
  4. mozza cheese, pizza sauce, sliced ham, pineapples (in the microwave)

However, my kids like neither the rice cakes or rice wraps. :( Some days it is tough, but we usually abide by:

Mommy picks what you eat, and when you eat.
Child picks if they eat, and how much they eat.

At least, that is the philosophy. ;)

For Salads we try:

  1. potato salad
  2. deviled eggs
  3. macaroni salad
  4. apple salad
  5. berry salad
  6. Daddy’s Salad
