Cook Once, Eat Twice, Twice this Week

Let’s cook once, eat twice, twice this week!  :)

Skinless Boneless Chicken breasts:

  1. Butterflied white meat breasts, with baked potatoes, salad, and peas
  2. Warm Chicken Walnut salad, with raspberry vinaigrette & goat cheese

Extra Lean Hamburger:

  1. Lasagne, caesar salad, corn on teh cob, and broccoli with toasted almonds and garlic
  2. Soft Taco night.

Salmon

  1. salmon, BBQ seasoned roasted potatoes, red peppers, broccoli, mushrooms.  Cole slaw.

Salmon & Almond Salad

Even the kids ate this one!  It was so yummy.  We presented all these ingredients in separate bowls and dished it out as desired.  I suppose it could all be tossed together too though.  :)

Ingredients:

  • spring mix salad, bag (approx 6 cups)
  • 1/2 cup blueberries
  • 1/2 cup grapes (optional)
  • 1/2 cup candied almonds
  • 4 servings glazed salmon
  • 4 Tbsp sunflower seeds
  • 4 Tbsp Kraft Raspberry Vinaigrette salad dressing

Glazed Salmon Fillets

This is sooo easy and requires 4 ingredients – including the salmon.  :)

  • 4 4″ salmon fillets, defrosted or fresh
  • 2 Tbsp soy sauce
  • 1/4 c water
  • 2 Tbsp brown sugar
  1. Heat skillet to med.
  2. Add salmon & water to poach.
  3. Drizzle soy sauce & sugar evenly over all fillets.
  4. Cover and cook approx. 3-4 minutes per side, depending on thickness.  Try not to overcook – salmon is so yummy it is a crying shame when it is so cooked that it is dry!  THAT, my friends, is OVERcooked salmon.
  5. Remove from pan, and cut into chunks to use with Almond Salmon Salad. (new recipe coming tomorrow!

Easy Grilled Salmon

One of our favorite meals is this easy salmon.  Fish of any kind defrosts very well in the microwive, and it only takes minutes to cook.  If you’ve been around for awhile you know how much we enjoy our garlic!

Ingredients:

  • 4 salmon fillets or steaks
  • 4 Tablespoons of real mayonnaise
  • 4 dashes of garlic powder (I don’t use garlic salt, but I suppose it wouldn’t hurt)

THAT my friends, is IT!

  1. I use my toaster oven,
  2. turn it on broiler,
  3. cover the tray with tin foil,
  4. lay out the salmon in a single layer, and
  5. spread each with one tablespoon of mayo.
  6. sprinkle with garlic.
  7. broil or grill for 3-4 minutes each side.  Do not overcook!

TIP:  fish is DONE when it is no longer translucent.

UNTIP:  check for done-ness by flaking apart with a fork.  Anyone have a more sophisticated approach?  (And don’t get me started on thermometers – I am death to thermometers – 10′s of them.)
