				<content:encoded><![CDATA[<p>Guess what today is? Er, if you&#8217;re reading this on Easter Friday, guess what yesterday was?</p>
<p>The last freaking day of school before Easter.  Guess who realized <em>today</em> that it was the last day before Easter break tomorrow?  You&#8217;ve obviously had your coffee if you can follow that.</p>
<p>Oooh. Coffee.</p>
<p>Where was I?</p>
<p>Pinterest to the rescue!  I was going to &#8211; just this second &#8211; paste some of those beautiful photos here for you to see, but then I decided I&#8217;m not that self deprecating.  We wouldn&#8217;t want you to be tempted to think I&#8217;m not as creative and fabulous as I do.</p>
<p>So <em>at an unnamed place on the internet that starts with P, </em>I found this recipe for these gorgeous little marshmellow Easter egg nests with cadbury chocolate eggs inside.</p>
<h2>Here is how the original Easter Egg Nests recipe went:</h2>
<p>- <em>you whip up some home-made marshmallows (</em>by this time I&#8217;m totally sucked into my most <del>sarcastic and cynical</del> pleasant self)</p>
<p>- <em>then you </em>pipe<em> them with tip #%*(&amp;* into nice swirls on </em>parchment<em> paper </em></p>
<p>- <em>simply roast up some coconut till nice and toasty, sp</em><em>rinkle approximately 21 strings around your swirl</em></p>
<p><em>- lightly indent the center of your swirl with chocolate eggs</em></p>
<h2><em></em>Cathy Version</h2>
<ul>
<li>Buy pink cupcake paper cups</li>
<li>Buy large marshmallows (when those run out use a bazillion little ones)</li>
<li>Bake them at whatever oven for approximately a few minutes until big and puffy</li>
<li>Shake a bag of coconut with green food dye in it so that it looks fun and the children want to do it for you. Until blended.</li>
<li>Sprinkle green &#8216;grass&#8217; around edges of each puffy marshmallow</li>
<li>Smush down in center with three Cadbury chocolate eggs.</li>

<p>My husband came in this afternoon, announcing that he has a present for me!  Yay.  I <em>adore </em>presents.  I hint at them.  I leave suggestions for random gifts of love around the house.  I flat out ask for them.  A girl has to feel special.  I really dont care if its a tissue paper flower, or a single chocolate.  Its truly the thought that counts.  So my husband gets into the backseat of the car to pull out my present.</p>
<p><em>Yippee.  Presents! </em></p>
<p>He comes in with 2 grocery bags full of stuff.  Cool.</p>
<p><em>Present?</em></p>
<p>Apparently its Pancake Tuesday.  This is the first time I&#8217;ve ever heard of such a thing.  But since I wasn&#8217;t planning on cooking supper tonight anyway, I&#8217;ll take it.</p>
<p>Pancake Tuesday, you ask?  Me too.  Apparently today is the day before Lent.  <a href="http://en.wikipedia.org/wiki/Lent">Lent</a> is the event in Catholic/Anglican/liturgical religions that is the 40 days before the death of Jesus.  (Easter) And, apparently, preceding Lent, is <strong>Pancake Tuesday</strong>.</p>
<p>Yippee.  Pancakes.</p>
<p><em>Present?</em></p>
<p>&#8220;That is your present. I bought pancakes.&#8221;</p>
<p>Between you and me, I love the man.  I adore him.  I adore how he puts up with me.  I adore his neurosis and unshakable calm.   <em>But pancakes?  </em></p>
<p>I suppose since it will take all of 30 seconds to make dinner, and we get strawberries &amp; whipped cream on them, that counts.</p>

<p>You&#8217;ll need about 2 Tbsp pink sugar (or just put dye &amp; sugar in a bag and squish)</p>
<p>and a cup or so of cheerios &#8211; honestly, I didn&#8217;t measure!</p>
<p>Heat on High until sugar starts to melt.</p>
<p><strong>It will burn quickly. </strong></p>
<p>So stir like the wind, darling.</p>
<p>Remove from heat.</p>
