Even the kids liked this one:
Ingredients:
- 4 frozen salmon fillets
- 2 cups broccoli
- 4 cups cooked pasta (we like the rice pasta from Galloways)
- misc. veggetables, cut up (I used some shredded carrot, onion, and half a red pepper.)
- For Sauce:
- 2 Tbsp brown sugar
- 2 tsp cooking oil
- 2 tbsp soy sauce
- 3 cloves garlic, minced
- 1/4 c. water
Instructions:
- Cook pasta according to directions.
- Defrost and cut up salmon into chunks. Toss into frying pan.
- Cook broccoli in microwave (a couple tablespoons of water & 6 minutes on high)
- Add vegetables to salmon, except broccoli.
- Add glaze ingredients to salmon & vegetables in pan. (no need to combine separately)
- Cover 2-6 minutes, over med-low heat, stirring often. Until salmon is done.
- Add cooked broccoli, cooked pasta, to frying pan. Serve hot! Yummy!
