Philippino Pork Dish: Adobo

Ingredients:

  • 500 g, each:  cubed pork & chicken,
  • 4 Tbsp vinegar
  • 1/2 c soy sauce (See the GF shopping list)
  • 3 Tbsp crushed garlic
  • 2 tsp whole peppercorn (pick these out of the children’s servings)
  • 2 Tbsp b. sugar
  • 2 bay leaves
  1. Fry pork & chicken together until browned.  A little olive oil may be necessary.
  2. Add all ingredients together.
  3. Cover, and simmer on low for 10 – 20 minutes, until meat is tender.
  4. Remove lid, and boil down sauce until thick – another 5 – 10 minutes.
  5. Serve over rice.  Yum!
