<p style="text-align: left;">Welcome to the world of &#8220;Mamma&#8217;s Surprise Skillet&#8221;.  The ingredients are usually a surprise to Mamma (until about 5PM).</p>
<h2 style="text-align: left;">Any successful Mamma&#8217;s Surprise Skillet will need the following:</h2>
<ul>
<li>Potatoes, frozen hashbrowns or frozen french fries</li>
<li>Sausage/Egg/Bacon or a combination</li>
<li>1 Tbsp ClubHouse All in One Italiano Seasoning</li>
<li>1/2 onion, chopped</li>
<li>olive oil</li>
<li>Ketchup, for <del>garnish</del> serving</li>
</ul>
<p>This particular dinner was a combination of potatoes, gluten free sausage, eggs, broccoli and onion.</p>
<h2>Directions:</h2>
<ol>
<li>Heat oil in skillet over medium &#8211; high heat.  Saute onions until lightly brown.</li>
<li>Add sausage / bacon if using and let all the fat drain into the pan.</li>
<li>Add potatoes, diced.  Add seasoning and extra oil if needed. Cook until potatoes are done (10 min)</li>
<li>Add other veggies, cook until done (5 minutes or so).</li>
<li>Lastly, scramble 2 eggs in a bowl, add to the skillet and stir through until cooked.</li>
<li>Serve with a side of ketchup.</li>

<p>Yesterday Emma turned 8 years old.</p>
<p>She has always been my sunshine.</p>
<p>Ever since she was born, she&#8217;s the one that wants to smile.</p>
<p>She wants to laugh.</p>
<p>She sees the cup as half full.</p>
<p>She&#8217;s sensitive and kind.</p>
<p>She has a beautiful soul that emanates kindness and compassion.</p>
<p>She&#8217;s perceptive beyond her years.</p>
<p>And possesses stubborn streak that few get the privilege of meeting.</p>

<p>I have about 5 Oatmeal Raisin Cookie recipes in my recipe binder that I&#8217;ve tried to edit into gluten free goodness.  Frankly I just didn&#8217;t think that any gluten free recipe would be as good as MINE.  But alas, I have&#8217;t quite perfected that elusive chewy and crisp on the outside Oatmeal Raisin Cookie.  And after several flopped batches, I loose my motivation to keep wasting expensive gluten free oats!  Today Mike isn&#8217;t feeling well, and Oatmeal Raisin Cookies are his favorite, so I gave in, and searched for a GF recipe.  I&#8217;ve actually tried a couple GF oatmeal raising cookie recipes from my cookbooks but I haven&#8217;t had any that are truly blog-worthy.</p>

Lightly grease a cookie sheet or line with a Silpat baking mat.</li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Beat butter, shortening and sugars until well combined.  Add the eggs and vanilla extract and mix until smooth.  Add the flour blend, baking powder, baking soda, xanthan gum and salt and mix until thoroughly combined. Bake for 10-12 minutes, or until the edges turn a light golden brown.
