Low fat, gluten free spring menu

So I’m at it again, time to shed a few pounds (or in my case, more than a few). How did this happen? Before you come to my aid with a reasonable explanation, you don’t understand!

One day I woke up overweight – I swear! I didn’t see it coming. I probably need new glasses. Hey, why hasn’t my optometrist called to remind me?

Aha! Its her fault!

Now that we got that straight, lets talk spring menu for the week, shall we?

Sunday – we had some very tasty roasted veggies, spagetti with black bean and roasted red pepper sauce
Monday – turkey burgers with baked fries for the kids
Tuesday – veggie lasagne
Wednesday – spinach stuffed sole with roasted broccoli salad
Thursday – pulled bbq pork (tenderloin) burgers with caesar salad
Friday – thin crust veggie pizza
Saturday – fend for yourself supper & poached eggs

Now you have learned two things.
1. You can find someone to blame too if you look hard enough.
2. Cooking light can be oh so yummy.
