How to manage LIFE and MEALS

A bit of a family update – one of the girls is being tested for learning disorders, has a hearing and eyesight problem.  And doesn’t seem to be phased by it one bit.  One daughter is on a sugar free diet and trying out new medications for ADHD, and the other is just cruising along in life totally enjoying her status as baby of the family.  My husband, our celiac is home from work on long-term disability with an unrelated illness, so, like us all, life has been full.

For the most part, gloriously full!

Work has been going GREAT – I’m sponsoring a new conference (that I can’t wait to attend next September).  I’ll be posting my personal story on their blog starting in February.

I’m planning this retreat for myself and our 11 year old daughter towards the end of Feb/beginning of March.

And, our kitchen?  First, I want to say I couldn’t do any of this without the support of my husband and our cleaning lady, a great staff at the girls’ elementary school, a fantastic pediatrician, top-notch employee assistance plans at hubby’s work, and large serving of denial.

After a few weeks of constant fast food – and then substituting Subway Sandwiches for the kids and Nando’s chicken for hubby, I’m starting to feel the yearning for home- made meals again!  But no matter what is happening in life, cooking takes time.  And to take the time, I have to make it a  priority.  So last week, I gave it a whirl.  Surprisingly it was also easier than I remember!

So here’s to another week of home-cooked meals!  I hope you get some inspiration (see how easy it is!?) from this menu:

MainStay:

??: Breakfast for Supper (GF Pancakes & Eggs)

Friday: Pizza Movie night

Prepared Meals:

  1. Beef Stroganof with Mashed Potatoes
  2. Tilapia with Crumb Topping & Rice
  3. Stew w/ a side of ketchup (just being honest)
  4. BBQ Pulled Pork on Rice
  5. Chicken Broccoli Cheese Bake

Backup: 

We need a backup in case I end up working until 5:30 or Mama doesn’t want to cook.  Our backup this week is the bag of chicken nuggets and french fries in the oven. And we always keep a few frozen tv-style gluten free dinners (leftovers) for backup nights.

Condiments can be tricky for gluten-free cooks/eaters.  And we love our ketchup as much as the next guy.  Its been 4 years since I started this blog, and I’ve learned some things along the way – tonight, I updated the Condiments section so you can easily see what is generally safe, generally not.

Yummy July Holidays!

I love this post.  For some reason, I may delay all the others, but this one – how can this be anything but FUN?

National Month of the ….

  • Hot Dog!
  • Ice Cream
  • Blueberries
  • Culinary Arts (not sure about this one – sounds a little artsy for this down-to-earth cook)

And one that we simply must SKIP: the National Canned Luncheon Meat Week.  Yuck, yuck, double-yuck.

July 3 – Chocolate Wafer Day –   Hubby swears by these Glutino ones and between you and me they are definitely better than the gluten-counterparts.

July 4 – Barbecued Spareribs Day  - Oh you must try my BBQ Ribs recipe – nothing but oooo’s and ahhhhh’s when I serve it!

July 7 – Strawberry Sundae Day – Hallelujah!

July 8 – Chocolate with Almonds Day – our kids’ school fundraiser is actually selling gluten-free chocolate covered almonds now! Yippeee!

July 10 – Piña Colada Day (Can’t say that I’ve ever tried one of these grown-up drinks.  I think this sounds like the perfect excuse.  Are you joining me?)

July 13 – French Fries Day

July 14 – Grand Marnier Day  (This is also PICK blueberries day – but doesn’t Grand Marnier sound less sweaty? )

July 17 – Peach Ice Cream Day (really?  Peach Ice Cream?  I’m gonna have to find some.)

July 19 – Daiquiri Day (I swear I’m not making it up – there’s a lot of alcohol related holidays in July, apparently!  It also happens to be national Ice Cream Day – but we’ll leave that for the kids)

July 20 – Ice Cream Soda Day (Do they mean “Ice Cream WITH Soda”?  Does that mean there’s no alcohol involved?  Color me disappointed.)

July 23 – Vanilla Ice Cream Day

July 24 – National Tequila Day (yep – its Gluten Free too!  And you deserve a double!)

July 25 – Hot Fudge Sundae Day (Have you tried my Hot Fudge recipe – its TO. DIE. FOR.  Not really though. )

July 27 – Kerosene Scotch Day (In my opinion, this more of a fossil fuel than a drink.)

July 30 – National Cheesecake Day – Oh I have a very yummy looking strawberry-cheesecake swirl recipe I’m going to try this month and post (if it doesn’t flop)
